Vegan Beef and Rice Hotdish

Ingredients

  • 48 oz soy milk
  • 2 cups Daiya cheese
  • 28 oz gardein beefless ground
  • 8 oz sliced mushrooms
  • one bag frozen mixed vegetables
  • two cups basmati rice
  • one cup of onions

Instructions

  1. Put the ingredients in an electric pressure cooker with the rice at the bottom.
  2. Cook for five minutes.

Note: if you have the time you may want to cook the “beef” separately and then add it once the rest is done otherwise the nonmeat meat may dissolve. It does still tastes good but some may prefer the beefy chunks.
