Vegan Enchilada

Children and adults alike thoroughly enjoy these enchiladas. We use diaya vegan cheese and mild Hatch organic enchilada sauce. Both are vegan and tasty. The enchilada sauce is in a BPA free can. Whether you consume meat and dairy or not this dish is absolutely delicious.

Ingredients

  • tortillas
  • pinto beans
  • daiya cheese
  • Hatch organic enchilada sauce

Instructions

  1. Wrap pinto beans, enchilada sauce and daiya cheese into tortillas.
  2. Refrigerate until ready to use.
  3. Cover tortillas with enchilada sauce and daiya cheese.
  4. Heat in the microwave or oven until warm.
  5. Let cool and serve.
